prodeus Wednesday: Writing 1

 Hotpot Recipe


A hot pot is one of China’s most popular foods! This dish consists of broth (soup), meat slices and vegetables. There are so many different flavours to choose from.


Your job is to watch the provided video and write out the recipe for it. Try make sure that you get all of the ingredients, as well as write out the steps that need to be taken to make it.

Large plate of Dried Red Chillies

Small pot of water

Vegetable oil

Chopped ginger

Chopped garlic

Pixian county bean paste 

Black bean sauce

Lump sugar

Fermented rice

Beef

Salt 

White pepper powder

Sichuan peppercorn powder

Eggs

Chilli flakes

Shrimps
Pork

Soy sauce

Red dates

Barbary wolfberry fruit

Tomatoes

Hoisin sauce

Sesame seeds

Worcester sauce

Sesame oil

  1. Fill a pot with water.

  2. Put the water on the stove.

  3. Take your whole chicken and put it in the water

  4. Take some of your scallions and tie them together before putting them in the water with the chicken. Make sure to leave some to dice for later.

  5. Take your large sliced fresh ginger and add to the pot of water.

  6. Simmer all of your ingredients for 2 hours.

  7. Put the Sichuan, Fennel, Star Anise, Bay leaf, Cinnamon stick, Black cardamom, Clove, Fructus Amomi in a spice grinder and grind together.

  8. Tip the spices into a plate and add enough cooking wine to soak the spices for 30 minutes.

  9. Take your dried red chillies and boil in a small pot of water for 5 minutes.

  10. Drain the chillies and put on a chopping board.

  11. Finely dice the chillies and put in a plate on the side.

  12. In a large work with a lot of oil add chopped scallion, chopped garlic, chopped ginger, diced chillies, pixian county bean paste and mix. 

  13. While the oil is sizzling add black bean sauce,green sichuan peppercorns, lump sugar and your spice blend. 

  14. Stir again and add your fermented rice stirring until mixed together.

  15. Slice your beef thinly and add salt, white pepper powder, sichuan peppercorn powder, an egg and cornstarch and mix together with your hands. 

  16. Once properly mixed take each individual slice and dip in chilli flakes and put to the side.

  17. Finely dice your shrimp into a paste, put in a bowl, add some water, white pepper powder, egg white and mix, then add some cornstarch and mix again, placing on a plate when you have finished mixing. 

  18. Cover this with gladwrap and put in the fridge for 2 hours.

  19. Take your pork and finely dice, add ginger, scallion and salt. Add white pepper powder. Soy sauce and water and mix.

  20. In another bowl mix 3 eggs add cornstarch mixed with water and olive oil.

  21. In a small pan make a small egg casing, place a small piece of pork inside and cook like a dumpling.

  22. Take your chilli sauce add to the pot, add salt, scallion and ginger, dried chillis and the chicken broth (made from boiling the chicken).

  23. In the other side of the pot add mushrooms, scallions, red dates, barbary wolfberry fruit and tomatoes and add more broth.

  24. Put this on to boil and start adding the things you want to cook to it, that you have prepared and any more vegetables that you like.

  25. For more flavour mix hoisin sauce, sesame seeds, scallions, sesame oil and worcester sauce and mix.and when you take out your hot food you can dip it in here before you eat it.

→I’m not sure it looks really hard and has a lot of ingredients and takes a long time.  I also didnt know all of the ingredients and what they might taste like.
